Journey to Cassoulet

I find the journey to discovering a new recipe for us pretty interesting. This one is a great example of how we discovered this hearty Duck Sausage and White Bean Cassoulet. It started with a snowboarding trip to Tremblant a few weeks ago. When I heard on the way back home, that we will stop in Montreal for brunch, I messaged our friends Mike and Diana. This was in hopes to find out where the duck specialty shop is since they introduced us to their products at bbq last year. At Le Canard Libere, we picked up a few slabs of duck liver, some prepared foie gras spreads, and some duck sausages. Without considering much on how to eat/cook any of these, we figured we would take it as it comes. Finally yesterday, Nick said he wanted to eat the duck sausages and it was up to me to find some recipe. And lone behold, I found this recipe online from Talk with Your Mouth Full: The Hearty Boys Cookbook. If I didn't go to snowboarding, or didn't try Mike and Diana's foie gras, or didn't force Gary to drive us to the shop while in Montreal, we wouldn't be making this dish today. And that's how crazy and tasty things normally happen here. I find buying some different ingredient from the norm always forces you to try new things. Sometimes, starting with the ingredients does make things a little more interesting.
