Bartlett Pears, Delicata Squash, and Royal Gala Apples from OAS

I will be eating a lot of the fruit I get from OAS this week. Really need to detox before the retox in San Francisco. Maybe I can use this recipe for the squash? It is a recipe fom Grant Achatz. If I close my eyes while eating this, will it bring me back to Alinea?
